The original Rudy's Country Store and Bar-B-Q was first started by Rudolph Aue in 1929 in Leon Springs, Texas. It originally started as a gas station, repair shop, and grocery store. It gained its fame however when in 1989 it added BBQ to the store. People flocked to the joint for it's 100% oak wood smoked meats rubbed with their specialty spices.  It became so popular that it expanded its store across the west. Today Rudy's BBQ has about 34 locations sprinkled across Texas, Oklahoma, Arizona, New Mexico, and of course Colorado. Although it's a franchise it's Colorado Springs has become a favorite among locals.

They are most known for their oak smoked meat.
